This is now my go-to recipe for a 7-layer dip, guacamole and pico de gallo. I followed the recipes as written for the 7-layer dip, guacamole and pico, except I only used about 3/4 of the jalapeño in the guac because there was going to be a lot of kids there. The idea for individual cups makes the prep work a lot more time consuming, but it is great for a party so I felt like it was worth the extra time. Sprinkle remaining 1 teaspoon taco seasoning. Next, spread guacamole and top with shredded cheese, olives, scallions and tomatoes. Top with enchilada sauce, spreading out to the edges. Mix well and spread evenly over refried beans. I asked a couple of people if they felt if it had too much onion and they all said no, that it was perfect the way it was. In a medium mixing bowl, combine sour cream, hot sauce and 1 teaspoon taco seasoning. I laughed and told him that most people actually LIKE onion, unlike himself. SO GOOD! I got rave reviews from everyone except my husband, lol! He said there was way too much onion in the pico. I made the pico de gallo and guacamole recipes you had on here also for this. Now, you could make these in glass tumblers too, but we are pretty casual over here so plastic tumblers are the way we roll.
